It’s officially summer in South Florida! Thankfully, those rising temps bless us with an abundance of mangos. If you’re anything like me and are needing a dish to eat up the dozens of mangos falling from the sky daily, this tangy salsa recipe is perfect for you. Irresistibly sweet mangos paired with a little heat from jalapenos and some zesty citrus, the dish pairs well with grill season and stores well in the fridge for 3-4 days. Only 7 (versatile) ingredients and comes together in less than 15 minutes!

TIP: Make sure your mangos aren’t too ripe. Otherwise, they may become mushy when stirred.

ingredients

  • 2 medium mangos, diced

  • 1/2 large red bell pepper, diced

  • 1/4 large red onion, finely chopped

  • 1 jalapeno, deseeded and diced

  • 1 large clove of garlic, minced

  • 1/2 cup cilantro, chopped

  • Zest & juice from 1 small lemon (or lime)

  • Salt & pepper to taste

Serves 6 as side dish

VARIATIONS

I love the versatility of this recipe! Super easy to swap ingredients based on preference or availability.

  • Eliminate jalapeno if you aren’t a fan of spice.

  • Swap yellow or orange bell pepper for red.

  • Eliminate red onion if you’re sensitive (or use finely chopped scallions for a similar but less intense flavor).

  • Substitute parsley (mild flavor) or basil (sweeter flavor) instead of cilantro.

  • Add avocado for a creamy texture!

  1. In a medium bowl, combine mango, red bell pepper, red onion, jalepeno, garlic and cilantro.

  2. Add the zest and juice of 1 lemon (or lime) into the bowl. Be mindful to zest only the colored skin, not going further than the white inner pith.

  3. Mix ingredients gently & serve chilled. Leftovers can be stored in an airtight container in the fridge for 3 days.

ways to serve

We enjoyed this recipe with grilled chicken, coconut white rice, and a homemade cabbage coleslaw! This dish would do well as an appetizer with tortilla chips or spooned over crostinis or dished over grilled meat & seafood. The sweetness of the mangos pairs excellently with smoky grill flavors.
