RED, WHITE AND GREEN! GRILLED PIZZA TWO WAYS
No wood fire pizza oven? No problem! Today we’re combining grill season with everyone’s favorite- pizza! The two pie variations, a Sweet n Spicy Ricotta Red and a Pesto Chicken & Arugula, were both delish! Not only did it come together so easily, but it’s fun & less messy than traditionally making in the stove. Would be the perfect hit for a summer dinner party too! Best serves 4-6.
ingredients - SWEET N SPICY RICOTTA RED
Dough for one pie (purchased pre made from local Italian grocer)
Spicy pizza sauce (used 1 12.3oz jar of Rao’s Arrabbiata)
Whipped ricotta
Basil
Mike’s Hot Honey
ingredients - PESTO CHICKEN & ARUGULA
Dough for one pie
Pesto (can used store-bought, or see our recipe below)
Mozzarella (shredded)
Cooked chicken breast (grilled or baked with Italian seasoning)
Arugula
What I love about pizza is that you hardly have to measure anything (measure with your heart at least!). Add more or less of any ingredient depending on your personal preference and serving size.

Turn on grill to highest heat
Stretch and roll dough out to size of choice- ours was more rectangular to best fit both pies on the grill. Lightly apply olive oil to one side of the dough.
Place oiled-side down on grill and then lightly apply oil to other side. Cook until desired firmness then flip
After both sides have cooked a bit, start assembling! First add the sauce base, cheese, chicken and lastly herb/arugula topping.
Close the grill and allow to cook for approx. 10 minutes. You can easily check on how it’s cooking to take off earlier or leave on longer depending on desired crispiness
Remove from grill and top the red pie with hot honey
Slice and serve!
Homemade pesto
2 cups basil
1/2 cup pan-toasted walnuts (or pine nuts are more traditional)
1/3 cup olive oil
2 garlic cloves
Zest & juice from 1 lemon
Large dash of salt, pepper to taste
1/4-1/2 cup freshly grated parmesean
Puree in a food processor until smooth
This quite easily became a new summer staple! Impress guests or spruce up date night at home with a grilled pizza night. We enjoyed having the variety of the two pies which complimented one another well. Let us know which one is your favorite!
